i hope you had a delicious weekend.
i was blessed to have a husband home all weekend!
we enjoyed walks in the sunshine and the rainy rain and watched a pileated woodpecker search for food whilst pecking.
& i made a pie.
& began work on a few new fun projects, including peach pie.
also,
i'm obsessed with making granola. obsessed!

{mine is based loosely on the granola recipe in the
Tassajara Bread Book}.
preheat oven to 250 degrees.
toss the following on a big, lipped baking sheet:
5 cups oatmeal;1 cup sliced almonds;1 cup flax seed;1 cup sunflower seeds;1/2 cup coconut shavings;1/2 cup cashews.mix with
1/3 cup olive oil + 1/3 cup honey + dash of water.bake for at least an hour.
once it has cooled, add dried fruit if you like ( i don't love fruit in mine).
{ to modify, use the following guidelines: for every three parts oatmeal, one part nuts and seeds (i used sunflower, almonds, flax seeds & cashews). for roughly 10 cups of dry ingredients, 1/3 cup olive oil and 1/3 honey or agave nectar + a dash of water.}
